			<content:encoded><![CDATA[<p>A recent survey of nearly 700 Americans showed that 72 percent believe they are healthy eaters, yet government data proves otherwise.</p>
<p>The USDA recently revealed that Americans get plenty of protein and carbohydrates, but often fall short on key nutrients such as magnesium, potassium and vitamins C and E.</p>
<p>&#8220;Fifty years ago, we only recognized extreme cases of vitamin deficiencies, like scurvy, which is caused by a lack of vitamin C,&#8221; said Carroll Reider, MS, RD, Nature Made vitamins director of scientific affairs and education. &#8220;Science has advanced. We now know that even small amounts of vitamin deficiencies hurt us much more than people realize.&#8221;</p>
<p>While most Americans appear well fed, a key question is: Are you nutritionally fit? To assess your nutritional condition, Reider posed the following questions:</p>
<p>Do you shun the sun? People who wear sunscreen, live in northern climates or have darker skin may not receive optimal levels of vitamin D, which is made following exposure to sunlight. Vitamin D helps the body absorb calcium and may also promote ovarian, breast, prostate, heart and colon health. Reider suggests 1,000 IU of vitamin D daily for people who spend most of their time indoors and those who don&#8217;t synthesize vitamin D easily, such as darker- skinned individuals and the elderly. Vitamin D food sources include milk and fatty types of fish; however, it is hard to achieve optimal intake through food alone. It is also available in supplement form.</p>
<p>Do your meals lack color? Does dinner typically consist of meat, starch and the same green vegetable? For optimal health, add more colors to your diet. Vegetables such as steamed carrots, peppers and red cabbage add vibrant hues to the dinner plate while citrus wedges brighten the standard bed of greens. Eating a variety of fruits and vegetables maximizes nutrient intake and provides antioxidants, which help fight free radicals that may cause premature aging. &#8220;A multivitamin formulated for your age and gender is also a good way to compensate for dietary imbalances,&#8221; Reider said.</p>
<p>Is fish a regular dish? The American Heart Association recommends two servings of fish per week. Reider suggests salmon and tuna, which are rich in omega-3 fatty acids. Some studies suggest omega-3 fatty acids may promote heart health. Other sources include walnuts, flaxseed or vitamins.</p>

It the spice mixture is red because of the added annatto seeds, which give food a red look to them when added. The blend contains spices such as cinnamon, clove, cumin, oregano garlic, and more. This blend is associated Mexican foods found in the Yucatan. It would be very easy to make this from your own home.</p>
<p>Achiote is the shrub that the annatto seeds come from which is added to the recado rojo mixture. This shrub is grown in Southeast Asia and was introduced to the Spanish in the 17th century. It is consider an inedible fruit that is used for its seeds. Long ago American Indians used the seeds to make body paints. Parts of the shrub can be used in medical remedies for health problems such as headaches and burns.</p>
<p>If you want to try these spices from your home, they are available at major grocery stores. You can even make your own blend of Mexican spices. <p>* cut into 1-inch sections with canning liquid reserved.</p>
<p>This soup was probably created by some homesick Frenchman. White asparagus(a French import), packed in jars or cans, is used for this recipe. Traditionally, crumbled, salted duck egg yolk is added to season the soup.</p>
<p>If white asparagus is unavailable, use frozen or fresh asparagus (in this case, add the fresh asparagus to the broth from the very beginning and cookuntil tender, before adding the remaining ingredients).</p>
<p>Combine the broth, 1 tablespoon of the fish sauce, the sugar and salt in a 3 quart soup pot. Bring to a boil.<br />
Reduce the heat and simmer.<br />
Meanwhile, heat the oil in a skillet.<br />
Add the shallots and garlic and stir-fry until aromatic. Add the crab meat, the remaining 2 teaspoons fishsauce and black pepper to taste.<br />
Stirfry over high heat for 1 minute. Set aside.</p>
<p>Bring the soup to a boil. Add the cornstarch mixture and stir gently untilthe soup thickens and is clear.<br />
While the soup is actively boiling, add the egg and stir gently.<br />
Continue to stir for about 1 minute. Add the crabmeat mixture and asparagus with its canning liquid; cook gently until heated through.</p>
<p>Transfer the soup to a heated tureen. Sprinkle on the coriander, scallion and freshly ground black pepper.<br />
Yield: 4 to 6 servings.</p>

<p>Below are some tips for making healthy food choices:</p>
<p>-  Coconut is high in saturated fat, while olives are high in monounsaturated fats and calories.  You  should use these items sparingly to avoid getting too many calories from fat.</p>
<p>-  When vegetable grains are cooked, saturated fat or cholesterol is often added.  For example, egg yolks may be added to bread or even pasta.</p>
<p>-  Processed, canned, or preserved vegetables may also contain added sodium.  With some people, too much sodium (salt) may lead to high blood pressure. There are some food companies that are actually canning vegetables with less salt.  You can look for these in the market area or choose fresh and even frozen vegetables.</p>
<p>-  Nuts and seeds tend to be high in calories and fat, although a majority of the fat is polyunsaturated or monounsaturated.  There are some varieties, macadamie nuts for example, that are also high in saturated fat.</p>
<p>Foods that are high in soluble fiber are a great choice as well.  Examples include oat bran,  oatmeal, beans, peas, rice bran, barley, and even apple pulp.</p>
