			<content:encoded><![CDATA[<p>All grains, with the exception of rice, and the various grain meals, require prolonged cooking with gentle and continuous heat, in order to so disintegrate their tissues and change their starch into dextrine as to render them easy of digestion. Even the so-called &#8220;steam-cooked&#8221; grains, advertised to be ready for use in five or ten minutes, require a much longer cooking to properly fit them for digestion. These so-called quickly prepared grains are simply steamed before grinding, which has the effect to destroy any low organisms contained in the grain. They are then crushed and shredded. Bicarbonate of soda and lime is added to help dissolve the albuminoids, and sometimes diastase to aid the conversion of the starch into sugar; but there is nothing in this prepcaratory process that so alters the chemical nature of the grain as to make it possible to cook it ready for easy digestion in five or ten minutes. An insufficiently cooked grain, although it may be palatable, is not in a condition to be readily acted upon by the digestive fluids, and is in consequence left undigested to act as a mechanical irritant.</p>
<p>Water is the liquid usually employed for cooking grains, but many of them are richer and finer flavored when milk is mixed with the water, one part to two of water. Especially is this true of rice, hominy, and farina. When water is used, soft water is preferable to hard. No salt is necessary, but if used at all, it is generally added to the water before stirring in the grain or meal.</p>
<p>The quantity of liquid required varies with the different grains, the manner in which they are milled, the method by which they are cooked, and the consistency desired for the cooked grain, more liquid being required for a porridge than for a mush.</p>
<p>All grains should be carefully looked over before being put to cook.</p>
<p>In the cooking of grains, the following points should be observed:</p>
<p>1. Measure both liquid and grain accurately with the same utensil, or with two of equal size.</p>
<p>2. Have the water boiling when the grain is introduced, but do not allow it to boil for a long time previous, until it is considerably evaporated, as that will change the proportion of water and grain sufficiently to alter the consistency of the mush when cooked. Introduce the grain slowly, so as not to stop the sinking to the bottom, and the whole becomes thickened.</p>
<p>3. Stir the grain continuously until it has set, but not at all afterward. Grains are much more appetizing if, while properly softened, they can still be made to retain their original form. Stirring renders the preparation pasty, and destroys its appearance.</p>
<p>In the preparation of all mushes with meal or flour, it is a good plan to make the material into a batter with a portion of the liquid retained from the quantity given, before introducing it into the boiling water. This prevents the tendency to cook in lumps, so frequent when dry meal is scattered into boiling liquid. Care must be taken, however, to add the moistened portion very slowly, stirring vigorously meantime, so that the boiling will not be checked. Use warm water for moistening. The other directions given for the whole or broken grains are applicable to the ground products.</p>
<p>Place the grain, when sufficiently cooked, in the refrigerator or in some place where it will cool quickly (as slow cooling might cause fermentation), to remain overnight.</p>

Unfortunately, cooking a good family meal requires both time and energy. A few wise moms have discovered a concept that has become known as once a month or freezer cooking to assist in those nights when time, energy, or both are in short supply.</p>
<p>The thought behind once a month cooking is that for one or two days (if you prefer to spread the process out over a couple of shorter days rather than one long day of cooking) of intense culinary effort your family can dine well for an entire month. Many women who have tried this have also discovered that not only does it help by always having something nice and home cooked for dinner, but also helps families stay within budget.</p>
<p>Far too many mother&#8217;s will guiltily raise their hands when asked whether or not they&#8217;ve ever resorted to fast food or junk food meals simply because they were too tired to cook or were missing one ingredient for a meal and did not feel up to running to the grocery store in order to pick up the missing ingredient. This practice can get expensive over time and rob your family of some well-earned fun money.</p>
<p>There are some important things you must keep in mind if you are considering once a month cooking as a way of life for your family. The first thing you need to keep in mind is that planning is the key. You will need to set aside a day (or two) for the cooking when nothing else is on the calendar. It is simply too difficult to see to all the details if you are planning your cooking event around car pools, soccer games, or dance practices. You need a full day that will be relatively uninterrupted. If you have a spouse, partner, or family member that can take the children for the day this will be the ideal situation. Otherwise be sure to have plenty of distractions on hand for the little ones or find a way to enlist their help with any cutting, chopping, slicing, dicing, or peeling that may need to be done.</p>
<p>You should also create a thorough menu followed by a list of each and every ingredient you will need. Shopping needs to be done on a day other than when you are planning to cook. This means that you aren&#8217;t likely to rush through the shopping trip and forget something as a result. Bring your menu and your list and get everything you need in one trip whenever possible. You can also save money by planning your meals for the month according to the sales circulars and coupons you have for the week in order to stretch your budget a little further.</p>
<p>Finally, you need to make sure that you have all the supplies, dishes, and containers you need in order to prepare and store the meals you&#8217;ve prepared properly. You should also make sure that the recipes you are using for your once a month cooking marathon are recipes that freeze well. It is even better if you have recipes that double well so that you can get twice the results from the same effort.</p>
<p>You should also make sure you are mentally prepared for your marathon cooking session. Beginning with a nice and tidy kitchen is a great start. Folding card tables make an excellent flat surface for storing things out of the way and freeing up valuable counter space for preparing and assembling the foods that will be prepared. You should also utilize as many appliances in your kitchen as possible for maximum efficiency. Don&#8217;t limit all cooking to the oven. Find dishes that freeze well and can be prepared in the crock pot or on the range top. Once a month cooking is a challenge but many women will agree it is well worth the effort on those nights when the thought of cooking seems unbearable and the wallet has been stretched to its limit.</p>

<p>The easiest grill to use is by far the natural gas grill. Natural gas grills are designed to hook directly into your home’s natural gas line, eliminating the need to provide the fuel source. This cuts out all trips to the grocery store for more charcoal or propane.</p>
<p>Another advantage when using a natural gas grills is the ability to control the temperature in which you are cooking. Natural gas grills have burner controls which allow you to produce different temperatures for the different cooking areas on your grill. This allows you to cook your meat on one side while keeping your side dished warm on the other.</p>
<p>Natural gas grills, have the ability to come with many different types of cooking surfaces. These different cooking surfaces include a BBQ surface, a flat grill, and a ribbed grill. Some grills even offer these types of surfaces as none stick, which allow you to cook a whole array of foods that you would not be able to cook on a grill otherwise. Some gas grills even contain a Wok type surface for cooking pasta and rise dishes, or a full rotisserie set that allows you to cook rotisserie chicken.</p>
<p>Natural gas grills are by far the easiest type of grill to clean. With other grills such as charcoal and smoker grills, you have to remove the wood and charcoal briquettes each time. Natural grills only have to be wiped down. Some natural gas grills even have a none stick feature.</p>
<p>Natural gas grills are not portable as you will need to be able to hook them up to your natural gas line, so weight should not be that big of an issue when you go to purchase your first grill. Instead, you should look at the surface area available. Will you be able to cook for just yourself and one other? How about a family of 5?</p>

<p>Broilmaster- One of the most popular brands of natural gas grills is the Broilmasters. This company has been around for a long time and prides itself on creating great grills, even in its companies early years. If you are looking for a reliable name, Broilmaster would be the way to go. One of the most popular Broilmaster grills is the Super Premium Series, which puts out 40,000 BTU’s of cooking power, and has a cooking surface area of over 695 square inches.</p>
<p>Brinkman- These simple natural gas grills put out a lot of power, and can be purchased for much less then it’s competition.  The Brinkmans, like the Broilmasters, are built of solid construction and meant to last a long time. <p>Lynx- Lynx natural gas grills were specially designed for cooking higher end meats such as steaks and ribs. This grill have a patent design that is suppose to lock in flavor and juices. The Lynx run on the higher end of the price range, anywhere from $500 to $3000. The typical cooking power is about 50,000 BTU and has a cooking surface area of 840 square inches.</p>

			<content:encoded><![CDATA[<p>The East Caribbean island of Cuba has a rich cultural heritage from which has arisen culinary traditions that are as vibrant and varied as the variety of cultures that have contributed to the development of this distinct and delicious cuisine. In addition to the ancient influence of the native peoples of Cuba, the Spaniards brought their own culinary styles, tinged by those of the Moors who held huge parts of Spain for centuries. The slaves that were brought from Africa made significant culinary and cultural contributions, with other culinary traditions being brought to the island with the French colonists fleeing uprisings in Haiti.</p>
<p>As these various influences came together, a distinctly Cuban flavor and style evolved, which is reminiscent of country peasant styles of cooking by oral tradition and eye, rather than relying on specific measurements and the creation of dishes that tend towards the simple and hearty, and that can be left on their own to simmer. Fussy, heavy sauces are unusual and deep-frying is simply not a favored cooking method. The island nation, naturally, uses a great deal of seafood in its cuisine, which encourages the use of simple cooking techniques and spicing that is meant to enhance, not smother, natural flavors.</p>
<p>The most common spices used in Cuban cuisine are garlic, cumin, oregano and bay or laurel leaves. Sofrito is also popular, and used in a wide range of dishes, from those of beans to those of meats to those that are made from a base of tomato sauce. A typical sofrito is made of green pepper, onion, garlic, oregano and black pepper fried in olive oil until the pepper, onion and garlic are soft and translucent and the flavors blend to perfection.</p>
<p>The dense, nutritious, energy producing vegetables commonly used belie the African and native peoples’ influence on the cuisine of Cuba. Yuca, malanga, boniato, and plantano are among these, and are often simmered together with complementary vegetables and served simply, drizzled with olive oil and sprinkled with chopped fresh onion – a satisfying, strengthening and simple dish for a hard working people.</p>
<p>Meats are often prepared using island flavored marinades of that use lime juice or the juice of a sour variety of the orange as a base. Then, the meats are roasted or simmered very slowly with spices, often for hours. Beans and rice are an essential part of most meals, with black beans being well known as a Cuban specialty.</p>
<p>Cuban cuisine is also notable for its baked goods, which include a variety of turnovers. Some are filled with spiced meats and other types feature a particularly Cuban blend of cream cheese and guava paste. Flan is among Cuba’s most beloved dessert items.</p>
<p>In Cuban cuisine, the subtle flavors of healthy foods are enhanced by cooking and spicing methods designed to bring out the best in each component of a dish. The culinary traditions of Cuba are a delight to the tongue, naturally, but they also offer a fascinating glimpse into a culture that has brought together many varied elements to create a cohesive whole.</p>

<p>Rice may be cooked by 3 methods, each of which requires a different proportion of water. These methods are boiling, which requires 12 times as much water as rice;  the Japanese method, which requires 5 times as much; and steaming, which requires 2-1/2 times as much. Whichever of these methods is used, however, it should be remembered that the rice grains, when properly cooked, must be whole and distinct. To give them this form and prevent the rice from having a pasty appearance, this cereal should not be stirred too much in cooking nor should it be cooked too long.</p>
<p>BOILED RICE  &#8211; Boiling is about the simplest way.  Properly boiled rice not only forms a valuable dish itself, but is an excellent foundation for other dishes that may be served at any meal. The water in which rice is boiled should not be wasted, as it contains much nutritive material. This water may be utilized in the preparation of soups or sauces, or it may even be used to supply the liquid required in the making of yeast bread.</p>
<p>BOILED RICE (Sufficient to Serve Eight)<br />
1 c. rice ; 3 tsp. Salt;  3 qt. boiling water</p>
<p>Wash the rice carefully and add it to the boiling salted water. Boil rapidly until the water begins to appear milky because of the starch coming out of the rice into the water or until a grain can be easily crushed between the fingers. Drain the cooked rice through a colander, and then pour cold water over the rice in the colander, so as to wash out the loose starch and leave each grain distinct. Reheat the rice by shaking it over the fire, and serve hot with butter, gravy, or cream or milk and sugar.</p>
<p>JAPANESE METHOD &#8211; Rice prepared by the Japanese method may be used in the same ways as boiled rice. However, unless some use is to be made of the liquid from boiled rice, the Japanese method has the advantage of being a more economical way of cooking this cereal.</p>
<p>JAPANESE METHOD  (Sufficient to Serve Eight)<br />
1 c. rice ; 1-1/2 tsp. Salt; 5 c. boiling water</p>
<p>Wash the rice, add it to the boiling salted water, and boil slowly for 15 minutes. Then cover the utensil in which the rice is cooking and place it in the oven for 15 minutes more, in order to evaporate the water more completely and make the grains soft without being mushy. Serve in the same way as boiled rice.</p>
<p>STEAMED RICE &#8211; To steam rice requires more time than either of the preceding cooking methods, but it causes no loss of food material. Then, too, unless the rice is stirred too much while it is steaming, it will have a better appearance than rice cooked by the other methods. As in the case of boiled rice, steamed rice may be used as the foundation for a variety of dishes and may be served in any meal.</p>
<p>STEAMED RICE (Sufficient to Serve Six)<br />
1 c. rice; 1-1/2 tsp. Salt 2-1/2 c. water</p>
<p>Wash the rice carefully and add it to the boiling salted water. Cook it for 5 minutes and then place it in a double boiler and allow it to cook until it is soft. Keep the cooking utensil covered and do not stir the rice. About 1 hour will be required to cook rice in this way. Serve in the same way as boiled rice.</p>
